If you're ever planning to go to Meghalaya, get ready not just for the scenic beauty but also for a culinary adventure that will leave you craving more (and possibly reaching for a glass of water!).

The First Bite: A Fiery Welcome


My first introduction to Meghalaya's food came at a small local market in Shillong. The vendors had an array of dishes that looked simple yet inviting—rice, curries, chutneys, and roasted meats. But the real surprise was the variety of chili used in almost everything. There's a certain warmth in the food here, both from the spices and the people who serve it.
I started with Jadoh, a signature Khasi dish made with rice and pork, seasoned with local spices. It was smoky, rich, and had that unmistakable spicy kick that wakes up all your senses. Served with a tangy chili sauce on the side, it was the perfect introduction to the fiery flavors of the state.
